Just call me the chicken canner....

Well, lately I have been dabbeling in the kitchen arts.... this one is the tricky - *cue Jaws music*.... pressure canning. I have to admit I was terriefied at first... I mean it rattles on the stove like its posessed if you dont get the pressure right. BUT, I was not daunted, only cuz my mom and gramma were there holding my hand... we canned potatoes. Pictures will be following this post in a couple days... Today is chicken canning... cut up stew chickens with bones... :) ITS FUN!

  1. Keep me posted... Ive wanted to try it too, but I have been intimidated by it and want to have someone show me how... dont want to blow up the house twice, if you know what I mean...

  2. I've done lots of regular canning, but not "pressure" canning. The rattling of the jars the regular way is bad enough, and then there's the sound later of the lids 'popping'. I use to can late at night and then go straight to bed. Got woke up scared to pieces a time or two by an unusually loud top popping.

  3. Pressure canning is rather scary...once you get the hang of it's not too bad...but I still worry that it may blow! ha! Come on over and say hi! :)

  5. HI!! I JUST found your blog and I am instantly intrigued/in love!! Your writing style and, well, just "style" are so much like mine it's scary!

    When I read your blog about canning, it SO made me smile! My mom was a BIG canner, but she was terrified of the pressure cooker. I, on the other hand, LOVE it! (I water-bath can, too).

    I GOTTA tell you about an, um, incident (for lack of a better word), one year when I was, maybe 4 or 5 and my mom was canning tomatoes "for winter". I asked her why she was doing that, and she told me that, "It's so we'll have food for the winter. We store it like the squirrels store their nuts". Ok, that made sense to me, I knew about squirrels, after all. What horrified my mom was the fact that I went and told everybody I talked to (I was a social kid and talked to EVERYBODY), that my mom was "squirrely" because she canned tomatoes and "stuff for winter". She NEVER let me forget that, either!
