Hey guys... I have a favor to ask you all. Not sure if I have posted this before, but I have a meal planner and try to make a variety of meals. In doing this, it helps me be able to plan what I will need to have a 'well stocked pantry' for the meals that I have planned. Yes, I do stray from it on nights that things have been hectic and I dont want to make my version of Chicken cor don bleu or lasagnia and go with brats on the grill.... BUT, I have noticed that I only make 2 yes I said 2 dish's that I use rice in.... yet I love rice. Do you guys have any dish's that you would'nt mind sharing with me? I wont claim them as my own, I just want somthing differant in my menu.... If you dont mind I would like to post how they turn out though, but giving you all full credit for your creations. OK? I promise not to publish anything without telling who/where it came from. Sound fair to you all...

Hmmm, rice, rice I have to think on that, I always just make stuff you can pour over plain white rice. The boy's sure look like their daddy... and I will come if you ever plan on staying put for a minute, geeze. Thats a long way to drive only to see your back side booking out of the driveway...

ReplyDeleteQUICK FRIED RICE (8 servings)
2 (10 ounce) packages frozen mixed vegetables
4 eggs
8 cups cooked white rice
12 slices bacon
4 carrots, diced
1/4 cup soy sauce
1 teaspoon salt
Prepare frozen vegetables according to package instructions and set aside. Scramble the eggs in a medium skillet and chop into small bits; set aside. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside, reserving skillet with bacon grease. Place the rice in the skillet of bacon grease and saute for 2 to 3 minutes, until coated. Mix in soy sauce, mixed vegetables, carrots and peas. Cook for 20 minutes before stirring the bacon and eggs into the rice; cook for another 10 minutes, stirring, and serve.
SKILLET HAM & RICE (serves 6)
2 medium onions, chopped
1 tablespoon olive or canola oil
3 cups cubed fully cooked lean ham
2 cup sliced fresh mushrooms
1-1/2 cups chicken broth
3/4 cup water
1/4 teaspoon pepper
2-1/4 cup instant rice
6 green onions, sliced
3/4 cup shredded Parmesan cheese
In a nonstick skillet, saute onion in oil until tender. Add the ham, mushrooms, broth, water and pepper; bring to a boil. Add the rice. Reduce heat; cover and simmer for 5 minutes or until rice is tender. Gently fluff rice. Serve with green onions and Parmesan cheese.

ReplyDeletePolynesian Pork Chops
4 boneless pork chops
1 tsp. garlic powder
1 tbsp. vegetable oil
1 med. onion, chopped
1 can Campbell's golden mushroom soup, undiluted
1/4 c. water
3 tbsp. soy sauce
1 tbsp. honey
1 can (8 oz.) pineapple chunks in juice
Hot cooked rice (I use wild rice)
Sliced green onions
Season chops with garlic powder. In a medium skillet, heat oil over med.-high heat. Add chops and onion; cook 10 min. or until the pork is browned. Add soup, water, soy sauce, honey & pineapple w/ juice.
Bring to a boil; cook over low heat 10 min. or until the pork chops are no longer pink. Serve over rice and sprinkle with green onions.

1 can Campbell's chicken broccoli soup
1 can Campbell's broccoli cheese soup
1 1/2 c Minute Rice
2 c water
2 c frozen vegetables
2 chicken breasts cut in 1 inch squares
preheat oven to 375. Mix both cans of soup, water, rice, vegetables and chopped chicken in a casserole dish. Spice to taste. Cook uncovered for 60 minutes.
This is great - one dish means little cleanup. I have a picture of my son sitting on the table eating right out of the casserole dish after we were all done. I hadn't gotten to the table clean up yet.
And you can mix up the soup varieties. I have used cheddar cheese soup, cream of chicken, cream of mushroom.

ReplyDelete1 chicken, cut up
1 pkt dry onion soup mix
1 can cream of mushroom
1 can cream of chicken
1/2 c milk
1 c instant rice
place rice in 9X13 greased pan. combine soups and milk. put chicken on top of rice. Pour soup mixture over making sure rice is moist and chicken is covered. cover and bake at 325 for 1.5 to 2 hours.

ReplyDeleteQuick n Easy Cream of Chicken (for 4 servings; you may want to add half again for six)
Start 4 cups of rice cooking (or 6, depending on how much your family eats)
Get out a big ol' skillet
Turn the stove on medium and melt a stick of butter (or a stick and a half)
Add 8 tbsp. flour (or 12) and whisk it in.
Slowly add a 12 oz. can of chicken broth(or 16 oz) and whisk in
When it's thick and bubbly, add a cup of whole milk (or a cup & a half) and whisk in
Add a bunch of chicken (I use two cans of the stuff from Costco--you could add three for your hungry mob--gotta keep those farmer's arms rippling!), or if you prefer, cubes of ham
A little salt & pepper, and a little paprika! (that's the secret ingredient)
Add some peas or broccoli for color (or serve them on the side)
Serve over the rice, which should be done by now.
My kids love it, and it's really fast to make on those days when you just have to get it on the table in 30 minutes.

Ok... don't know if it's up your alley, but this goes super fast at our house, and its quick to make :) AND, it can all be made for very, very little from aldi's products!

green beans
a few cans of cream of mushroom soup.
combine all above items, and proceed to stuff your face :)
My youngest also loves it with tuna, instead of chicken. Sausage, ham, and many other meats would work great as well!

A little fake tex mex for you, and a great way to use up leftover chicken or turkey, esp after making chicken soup:
ReplyDeletePut 1.5 C rice (I use brown) and 3 C water in corningware; microwave on medium high for 30 min to cook your rice.
(Why yes, I am a lazy cook, why do you ask?)
Meanwhile, mix 2-3 C of shredded cooked chicken with 8 oz tomato sauce and 1 package taco seasoning. Spread mixture on top of cooked rice. "Ice" top of mixture with 1-2 cans of refried beans. Top with shredded cheddar cheese.
Bake at 325 until cheese is melted and inside of casserole is hot (time varies depending on how long ago you cooked the rice!)

This a comfort food for us. You can use rice of your choice or mashed taters.
ReplyDelete1 lb ground beef (or venison) browned.
gravy mixed into the beef (your favorite gravy)
Serve over rice, side of veggies.
We like diced onions or diced green chilies (DH's) on top.

Rice - yeah okay like 1-02 cups
1 0r 2 cans of beef or chicken broth (I use beef)
a couple sliced green onions the whole onion or as much as you need.
grease the casserole dish. Cook at 300 for an hour or so until the onions float to the top and form a real light kinda crusty not really but prettytop. How's that for vague? I figure you can cook I am at work. It's yummy work with me GIRL! You will die from how heavenly this is.
Not really a rice recipe per se, but I have a suggestion to make rice better! I add wild rice, bulger wheat and pearl barley to the rice cooker with my rice, so there is a big wonderful pile of differnt textures and good-for-you goodness. After it's cooked, thow some cream of soup in with some garlic and whateves and serve with XXX. I steam up veggies and serve them over the top, but im not a big meat lover. My husband likes it when I stuff his pork chops with it though.

Brown 1 pound sausage. Crumble. Drain fat. Add 1 package of Lipton Chicken Noodle Soup and 1 cup of rice (uncooked). Stir together. Put sausage and rice mixture into a casserole dish you have a lid for (must be covered during cooking time). Add 2 cups water. Cover casserole dish. Cook in oven at 350 for 1 hour.
This is super easy and my family loves it. You will probably need to increase the quantity of ingredients for you family (mine is quite small).

Pizza Casserole (from my friend Becky VW. -{mom of 5 sons})
2 1/2 lbs hamburg
1 1/2 teasp. both salt & pepper
1/4 teasp. garlic salt (or powder)
1 qt. chopped tomatoes
1 can cream of mushroom soup
3/4 cup chopped onion
1/2 teasp. oregano
1/2 teasp. italian seasoning
2 cups minute rice
motzorealla cheese
Brown hamburg and onion. Drain. Add the rest of ingred. except cheese, mix well. Let simmer for 5 minutes. Put into greased 9 x 13 pans. Top with cheese.
Bake at 350 till cheese melts (about 12 minutes or so).
My husband just called, said he's on his way here and wondered if I'd like to go on a hot date ;-}

Rice Chantilly - a side dish
3 cups cooked rice
1/2 cup sour cream
1 teasp. salt
1 or 2 dashes ground red pepper
1 cup grated cheddar cheese (divided)
Combine rice, sour cream, salt, red pepper, and half of the cheese. Spoon into a greased shallow 1 qt. dish. Top with remaining cheese.
Bake at 350 for 20 min.
Very good with pork chops.
